Quantizing and smoothing audio

Hi,

I am working on a idea for my eurorack.

Within this project I am coming across two thing I would be intrested if those can be solved.

Both releate to the same thing.

I am having an output on my analog out that varies in frequency extremely fast.

1. Is there a way to kind of fix the frequency for a certain time. Lets say I trigger a module (sample & hold?) that keeps outputting the same value once triggered unti a new trigger is coming or a certain time has passed

2. Is it possible to have the output quantized? So if my analog output is sweeping between 100 Hz and 5 kHz - can I make it "jump" so that I can set a scale and while sweeping from 100 Hz to 5 kHz it is forced to just play frequencies that are on that scale and switch from one to the next depending on how close it is to the last / next allowed frequency?
