What code are you using to test the Ethernet? Shall I assume you are using an LWIP based application example provided by ADI? Here you can assign the IP address in the system.svc file. Choose lwip >> network 0 >> Edit. It lets you edit IP address, subnet mask etc.

I use the code that under the files at "<Installation Path>\BF609_EZ-Board\Blackfin\Examples\Power_On_Self_Test\Power_On_Self_Test\src.
