Can I write any c or assembly into a sigma studio project?
Possible to add a bit of code into the project constructed with the visual objects to handle something that isn't covered by the available objects?

Unfortunately, (and fortunately) the SigmaDSP family of IC is so optimized that the basic hardware needed for making it C compatible is not included. In other words, the HW architecture was not designed for supporting (optimally) a C compiler. Modules are written in assembly code and presented to users using SigmaStudio.
Fortunately because the missing hw overhead translates into cost savings to our customers.
Unfortunately because of the limitations it carries.
