I have a Voltage Controlled Delay, set to e.g 500 delays maximum. How to set up its control pin such that I have a user input linear control of the delay? All of the volume controls appear to be logarithmic (dB scale) so running a DC voltage of 500 (28 0 format) through one of those won't create a linear delay control. I don't want text entry in a DC source, need a slider or rotary control that can be moved with the mouse only, no keyboard.

You're correct that the volume controls blocks operate on a log, not a linear, scale. Unfortunately, I don't think that there are any graphical blocks in the SigmaStudio library that could be used to linearly adjust a parameter as an input to another block like the VCD.
